JOB TITLE DEFINITION: 

Meat Lab Attendants support the operation of the Meat Lab, selling beef, pork, and lamb. Attendants are responsible for meat cutting, meat processing, sales, and sanitation.

SAMPLE WORK ACTIVITIES: 

  • Retail meat over the counter
  • Wrap, weigh, label, and price cuts of meat
  • Assemble orders based on requisitions; enter correct weights as indicated
  • Prepare special cuts of meat ordered by customers
  • Cut, bone, trim, grind, process, cure, and smoke cuts of meat for sale
  • Assist in receiving meat; weigh and visually inspect; transport and store in proper location
  • Use knives, cleavers, meat saws, bandsaws, or other equipment to perform meat cutting and trimming
  • Maintain sanitary conditions in working areas; wash and sanitize walls, floors, and equipment
