JOB TITLE DEFINITION:
Meat Lab Attendants support the operation of the Meat Lab, selling beef, pork, and lamb. Attendants are responsible for meat cutting, meat processing, sales, and sanitation.
SAMPLE WORK ACTIVITIES:
- Retail meat over the counter
- Wrap, weigh, label, and price cuts of meat
- Assemble orders based on requisitions; enter correct weights as indicated
- Prepare special cuts of meat ordered by customers
- Cut, bone, trim, grind, process, cure, and smoke cuts of meat for sale
- Assist in receiving meat; weigh and visually inspect; transport and store in proper location
- Use knives, cleavers, meat saws, bandsaws, or other equipment to perform meat cutting and trimming
- Maintain sanitary conditions in working areas; wash and sanitize walls, floors, and equipment
